Last weekends mindfulness was to make pralines this time with browned butter roasted hazels and sea salt!!


Btw lost one of my rings the other day and all I could think about was how glad I was that it wasnt my Burger ring from Caroline Hjerpe!!

If you dont know what to do for November dinner you should kale the world and make a multi kale pie you can make pie crusts in a thousands way so make the one you find best I make a butter crust with sesam because I like butter and crunch frie yellow onion garlic green kale and black kale in oil until its soft but still got some structure and put it in your awesome crust mix egg heavy cream salt and pepper and pour it over the pie add a lot of chevre and västerbotten cheese and top with roasted walnuts grill it in the oven until its golden and smells of comfy food!!

One year ago I started my master project in San Francisco seems like forever ago and yesterday at the same time so strange what living on the other side of the world do to you!!


But I really miss some of all out eating adventures like standing in line for this crazy matcha ramen from Mensho Tokyo noodle soup will never be the same again!!


And the croissants Jedis at Vive la Tarte died twice!!


Nows the time to just fill your self with Citrus fruits and pretend that your the girl with the golden egg love Beskows fairy tales forever!!


When boosted with vitamin C you should also eat buttery sticky maple syrup upside down buns with pecans from Guntherska!!

Winter time is my favorite time so hate that Im always so busy and stressed this time of the year it just flies away the good thing is that no time means Yukikos sushi!!

OK so autumn is coming up and so is the rain the darkness and the cold but that also means a lot of cozy stuff for example you can still enjoy places like Rosendals garden and eat fennel soup with sourdough and whipped cream in the green house!!

Also its never to early to start dreaming and plan next summer maybe what you wanna plant in your garden or balcony a peony like this tree peony is on top of my list!!

In case you don´t know the queen of brunches you can also brunch on kafes Guntherska in Uppsala shrimp croissant are my fav forever sometimes I also take a glass of bubbles just because I can!!

Don´t forget to fika a new baked bun makes everything easier I think Broder Jakobs in Lund makes the best cardamom buns in the world always ask for the palest one I know doughy is wrong but I like it so I do!!

Spent last weekend at our summer house just enjoying the sound of the ocean all the colored leaves the smell of horses and ofc loads of good food and wine for example you can start the day with a buttery croissant filled with truffle brie and fig marmalade and oatly cappu always it was even so sunny that we could sit outside!!


I also hade my very first surströmmingsskiva or fermented codd party hehe had the smelly fellow with all of the traditional sides like hard flatbread boiled almond potatoes sour cream red onion smetana norwegian brown cheese (like hard messmör totally awesome!!) sea salt butter and roe it was so much fun but Im so glad we had beer to wash it down hehe first and probably last of this kind of party!!


As its time for the last fall flowers I have started to dream about Christmas plants do anyone have tips were to find different sorts of amaryllis? Really like last years trend with apricot colored ones!!

Ok kids during winter time you have to eat all the amaze seasonal fruit all of my favs are amazing and also pretty cheap right now orange dates mandarines and omg KAKI (persimon, sharon, Japanese kaki or whatever you wanna call them is case you wondered “Diospyros” is the name of the tree) just make sure that you buy the sort of kaki (there are two) that can be eaten when its not quite ripe (often the smaller round ones) or that you buy the other sort and wait for them to get soft and the fruit flesh jelly because otherwise the tannic acid will turn your mouth inside out but anyways please buy them HAPPINESS LIVE IN THEM PROMISE!!

I really love all the autumn dishes  but then again I really like heavy food kale and roots than been simmering in cream for forever so this sweet potatoe gratin we did was right down my alley together with a full-bodied red wine this is how you do it:


4 port

700 g sweet potatoe

2 cloves of garlic

0.5 red chili

2,5 dl heavy cream

To much of your favorite cheese (I like goat cheese, gorgonzola, feta, halloumi, parmesan, västerbotten ok so like all cheeses is najs)

Sage or other fresh or dried herbs you like

Peel and slice the potatoes. Peel and chop onions and chili (but remove the seeds or you will die). Mix garlic chili and cream. Add the potatoes, sage, salt and pepper. Sprinkle with loads of cheese like until you can barely see the sweeties. Bake in 200c until the gratin has a nice color and the potatoes are soft (around 30min +)

Another nice way to update potatoes is to just slice them in half and mix with some butter smoked olive oil sea salt and chili flakes simple as that!!

I tried to paint promise I really did I just wasnt up for it not a single line turned out how they supposed to you know the feeling maybe next time Ill be more creative!!

Also you should always past-a-time-away!! This Kaleonara (carbonara but without meat with kale you get it?!) is one of my all time favorite fall dishes ofc you can make itwith just one sort of kale or green kale instead but i like the kombo of the more buttery black kale and the crunchy brussels anyways make it like tonight please!!


4 port

1 bag of brussels

1 bag of black kale

1 yellow onion

1 clove of garlic


2.5 dl of heavy cream, smetana, sour cream or whatever you prefer

2 dl mushrooms (I love chanterelles but all is fine)

1 handful of roasted nuts like hazels walnuts or almond

As much aged cheese you want I prefer Västerbotten but parmesan pecorino or chevre is najs cheeses for this occasion too

Pasta (for this i like spaghetti)

Slice the kale. Chopp the onion and fry them in butter. Add mushrooms and then the kale. Pour over the cream and let it simmer until the kale has softened but is still cheavy. Boil the pasta al dente in fuck loads of sea salty water. Pour the pasta into the kale cream and top with grated cheese crunchy hazels and ground black pepper important also you can drizzle it with some truffle oil if you feel fancy as fuck!!

YES I have somewhat of a sweat tooth but since Im not a fan of jelly and already it to much chocolate I made some vegan date balls although I dont usually like things without real sugar and butter too much but kids make these chocolate balls!!

I love markets especially when all the harvest festivals are happening just stroll around and buy local stuff you dont really need but makes you very very happy just because nature are so present even if its man made kind of feels exotic these days!!

Eat a lot comfy food Sweden have the best traditional home cooked food these kind of month I think I mean meatballs made of ecological lamb from Gotland cream sauce with truffle butter fried chanterelles your own pickled jelly loves grandparents dill pickled cucumber and baked potatoes dont really eat meat but this month Ive had it like twice and thats really more than enough for me you dont have do be a vegan or vegetarian all the time you know but eat plenty of green and less and better meat me I only eat wild animals because knowing they had a good forest life makes me feel better and also sometimes local lamb just because I really love lamb and rather skip the rest and eat greens instead OK just make sure that when you eat meat that it really counts!!

Mixed weekend stuff that we really like for example lazy mornings in bed with pretty book, oatly icoffee cappuccino!!

Do as Pom and Flora says and eat breakfast all day long made this Banana Split Bowl from their book Frukost hela dagen and it was totally bananas chocolate granola with nuts and apricots greek yoghurt with coconut banana and maple syrup brunch hello!!

Also you can go to your local market and buy stuff that makes you happy you this time I bought my favorite flowers (that are eatable ofc!!) and a rhubarb chutney with loads of warm spices that I will have on pizza bianco together with fried kale blue or goat cheese and roasted nuts mmyuuum!!

Fall is soup time even me that dont really like soup think that green pea soup with cream and a splash of bubbles is the perfect lunch especially with creamy egg shrimps and ofc sourdough thats why you really eat soup toast forever!!

Contrast is everything so to really enjoy being at home we try to always have some fancy plans like going to our favorite restaurant, make a trip or eat a crazy brunch last time we went to Miss Voon Uppsala located on the top floor and had drinks and loads of small asian dishes like this lobster tacos while enjoying the view of Uppsala by night!!

So, spending this fall in Uppsala and would love to share some of my best places in exchange for your favorite eat and drinks fair right?!

To start with I always have buttery shrimp croissants with creamy egg and homemade majo with a glass of bubbles if I feel like it at Guntherska. Its a little bit pricy but so happy that I will start working just across the river!!

Every weekend theres a little farmers market at Fyristorg where you can buy local products like eggs, green, bread, sweets, jam, lemonade and flowers. Be there early if you want the good stuff!!

Uppsala has some nice burgers places with really good vegan options for us that prefer veggies for example Bastards burgers have insane vegan burgers and Guntherska knows their fries important crisp!!

Uppsala also have a good grocery called Nehlins who specialize in greens and veggies. they also have a big selection of cheeses and basically those two things are all I need!!

As you might have noticed I love pizza like I was carrying a pizza baby and my greatest sorrow is that i can not find any decent pizza in Uppsala so if you know were I should go raise your hand and I will be forever pregnant!! This one is a black caviar and seafood pizza with mozzarella from Luthagens kök but i was not 100% happy with the seafood, crust or amount of cheese that one had to much cheese on it sad no one like ever!!

Always try to take a walk in Botaniska Garden to see what the greens and flowers been up to. These grapes to will be ready in a prosecco!!

This is mys life saver, always. Yukikos sushi in Eriksberg serves the best sushi ever. Why I think its so damn good I dont really know but its something with the simplicity, the smooth salmon the always so perfect avocado and the giant makis that makes this sushi to an addiction. Make sure to order the tuna/ majo maki and the fried tofu called inari!!

I do not eat out much when in Uppsala so I would really need some dinner tips!! However, if having a girl night out we often go to Plock to eat tapas and have som drinks but basically the real reason is because they have amaze fries!!

And so new adventures begins and instead of San Francisco this fall Im leaving Skåne and moving to Uppsala for a landscape architecture internship . So excited but ofc there is a lot of thing that I will miss to death and just had to do one last time last week in Lund and Malmö!!


 Broder Jakobs bakes the best buttery sugary cardamon buns so ofc I had to have one (always ask for the palest because Im in to doughy yes) and a oat milk cappuccino for rainy Monday brekkie!!

I think Saltimporten serves the best lunch in Malmö so love took me to Nyhamnen by vesla and we had the lamb dish ever and I don´t even eat meat!! Will dream about these creative geniuses all fall!!

Also had to visit my favorite cafe Inkognito they make the best salt caramel chocolate cake in the world promise!! Also ty the banoffee pie!! And the grilled sandwiches!!

Never really liked the any of the sushi places in Skåne and after my new Poke crave from Lisbon I found out that there is a place on Kungsgatan in Lund that serves so fresh lunch bowls with tuna salmon cabbage slaw pineapple majo soy sauces and other good stuff for a really good price definitely a new go to whenever longing for raw fish sticky rice!!

Visited our local pizzeria La Cucina twice because Im totally and hopelessly in love with them and having their pizza baby this is pizza del mese with taleggio mozzarella salmi dolce fresh figs walnuts and basil white pizzas forever!!
